Catering Equipment Cleaning

The need for sanitation in catering equipment is an important factor in the process of preparing food. The area is normally designed to ensure that a proper cleaning regime can be carried out efficiently.

Catering Equipment Cleaning – The Problem

There is an ever present danger in the catering equipment cleaning of bacterial growth and possible contamination of foodstuffs within the preparation area. This applies not only to surfaces that have direct contact with food but also the general environment including the floors and walls. It is well known that although a surface may look clean it does not mean to say that it is hygienically safe for food preparation

Catering Equipment Cleaning – The Solution

Disinfectant and other cleaning products can be used but this is not always successful in hard to reach areas or where machinery is difficult to get at. The answer, certainly in larger facilities, may be the employment of machinery to assist in the cleaning process. For instance, for the floor area a scrubber drier machine could be used to clean it. This machine using a system of rotating brushes and squeegees cleans the floor by applying water and a cleaning solution and then drying it off. This machine would not be used in every catering area although some are suited to small areas and are labour saving and cost effective. Thoroughness is the watchword in catering equipment cleaning and no piece of equipment is more thorough than a steam cleaner. Grease is a particularly adherent result of the catering process and steam cleaners deal with it efficiently and effectively; by applying steam under pressure at up to 170ºC the grease and other residue are turned into a liquid state for easy removal. The advantages of a steam cleaner over other methods of cleaning are that it reaches into every nook and cranny of the surface, destroying bacteria lurking within it, and because it uses little or no chemicals it is more environmentally friendly. Steam cleaners can have an in built vacuum for removing residue after the cleaner has done its work.
